Please document the variables available to the templates generating notification emain and its subject

The documentation currently says very little about the variables I can use to configure

• ticket_email_subject
• ticket_email_header_fields

and the actual template.

After not finding anything here, I eventually found ​Customizing The Mail Subject and tried to use this to extend the subject line to include the (new) owner name if it changed.

It took a longish discussion with one of the trac people for me to understand that the genshi environment with AnnouncerPlugin is entirely different from vanilla trac.

It would be great to add a few lines explaining end users, which variables they can use in your extended environment.
